How do I get WMP to not update my info? I already don't have the box checked
in the options panel, but still the album info is getting updated. Is there
a way that I can at least change the updated info back? I can't seem to do
it.

It's a serious bug since v9, and is reported here quite often. But it's
not acknowledged by Microsoft.

You can't get the info back. An offline backup is essential.
