Nmarx, I think that would depend on the photo editing program you are using.
Usually there is a simple one button click to make such a conversion. You
might also try the "sepia" offering for old photos.

If you do not have any photo editing software to convert to B/W, download
the free:
www.faststone.org
software and install it.
Double click on the photo to open it and move your mouse pointer to the left
edge of the screen.
A menu will open, click on Hue-Saturation-Brightness and move the Saturation
slider to the left.

All graphic programs have means of adjusting color manually. So you want to
take the saturation all down and this will remove the color from the photo
and leave you with the option of having color in your photo instead of shades
of grey or black and white. This comes in handy if you want to pinkin the
checks color the eyes blue and reded the lips. Looks great on the screen and
in print...

free !!
